Usually it takes about 2 months to design and fold such model.There are programs called TreeMaker by Robert J. Lang and Oripa. They can be used to make designing process easier, but I don't use them. I want to be able to figure it out on my own. There are plenty of books, video tutorials, diagrams and crease patterns for folding all sorts of complex models. Also there are few tutorials about how to design models. Robert J. Lang has also written a book called Origami Design Secrets.
